It seems like you can take anyone to court in a different state whether they live there or not, and since 9 out of 10 times they will not show up to court, you win by default. and since today you can find out all assets of a person you can put a lean against everything they own. All I have to do is repeat that a million times, or not even that, just a few 1000 times, and I will never have to work again.

If you haven't been able to pay off the debts, then the creditor can sue you for it. There is nothing wrong in it. You need to contact an attorney and check out what steps you need to take in order to get the case transferred to the State of New York.
